Current & Recent Blends
This page is for our sour ale blends. Below explains some naming conventions:
Blend Numbers
& Blend Dates
Many of our sour ales have blends numbers & dates that allow you to recall when they were produced. Even on regular items such as Tempus, Phantasma & Antioch there will be some variation between batches.
Experimentalis
Fruited Sour Ales
Experimentalis is our line of blended sour ales that is produced using only fruit grown on our premises (Either the gardens or greenhouses).
Note: Not all of the sour blends we have done since 2014 are listed here as there are many.

Rubeus
Flemish Style Red Ale – 7.5% … Rubeus is a sour red ale reminscent of the classic Flemish style. It pours mahogany in color with a reddish shimmer and a small cream colored head. The slow aging process in Sangiovese & Tawny port barrels gives it distinct notes of plums, cherries & dark fruit.

Salsus
Gose Style Sour Ale – 4.9% abv … Salsus is our interpretation of a rustic Gose. It is triple decocted & brewed using wheat, spelt & barley malts. We use a touch of sea salt & spice it with coriander & pink peppercorns. Its citrusy & lemony tartness is balanced by a touch of salinity and a dry finish.
