Blend Numbers

& Blend Dates

Many of our sour ales have blends numbers & dates that allow you to recall when they were produced. Even on regular items such as Tempus, Phantasma & Antioch there will be some variation between batches.

Experimentalis

Fruited Sour Ales

Experimentalis is our line of blended sour ales that is produced using only fruit grown on our premises (Either the gardens or greenhouses).

Note: Not all of the sour blends we have done since 2014 are listed here as there are many.

  • Aether

    6.0% abv. – Dry Hopped Sour Ale – Æther is a pale ale brewed with wheat malt & oats fermented with our special wild yeasts. It is very lightly hopped during the boil and then dry hopped right after the primary fermentation. The dry hopping slows down the activity of the souring bacteria resulting in a very refreshing acidity complemented by the aromatics & flavors from the hops. Different batches will have different hop varieties.

  • Albus

    4.7% abv -Sour Witbier … Historic interpretation of a white ale brewed with ginger root, chamomile and lemon balm. Mixed fermentation with saccharomyces and lactobaccilus.

  • Antioch

    8.0% abv – Flemish Style Red Ale … Antioch is a blend of ales lying somewhere between the Flemish Red & Oud Bruin styles. Historically it would have been referred to as a “provision beer”, meaning it was stored and aged to allow the flavor to develop.

  • Baudelot Blanche

    5.2% abv – Sour White Ale … Baudelot Blanche is our foeder aged sour witbier brewed with traditional Belgian pilsener and locally grown wheat malt from Thrall Family Farms. After maturing in our oak foeder for 5 months it develops a beautifully refreshing acidity to go alongside the citrusy spice character from the bitter orange peels and coriander.

  • Exilis

    4.0% abv – Berliner Weisse … Exilis is our Berliner Style Weisse is brewed using a traditional 3 part decoction using the thin part of the mash in each decoction. The hops are added and boiled during the decoction process. Unboiled, the beer then sits in the coolship overnight. The next day it is transferred to the tank and pitched with some house yeast making this a “semi-spontaneously” fermented ale.

  • Experimentalis with Limes & Raspberries

    5.8% abv. – Fruited Sour Ale … This version of Experimentalis with Limes & Raspberries is a blend of 2 year old ales matured in Gandona Vineyards Cabernet Sauvignon (St. Helena, CA) & Matthiasson Vineyards Merlot (Napa, CA) barrels on our greenhouse limes and raspberries.

  • Les Ardennes

    12% abv –  Imperial Flemish Style Red Ale … aged for 12 months in port and whiskey barrels

  • Phantasma

    9.5% abv – Sour Porter … Phantasma is our interpretation of an old style German Porter (a style that went extinct long ago), brewed with wheat, oats, molasses and licorice root. No two blends will taste the same! It pours a viscous jet black in color and has notes reminiscent of red wines, dark fruits & hints of dark chocolate. It finishes dry with notes of oak & tannins.

  • Tempus
